Milk Protein Concentrate is a dry powder produced by removing all the liquid from milk though an ultra-filtration process. Milk is forced with pressure through a porous material which separates the components of the milk. Water, smaller lactose, minerals and vitamin molecules are filtered out while the protein and fat molecules are kept. The finished product is evaporated and spray-dried. The US Customs Service's classifies milk protein concentrate as processed milk containing 40-90% protein. Used in a variety of foods and in cheese making.
